Herb Roasted Sweet Potatoes

Last summer I got the special privlege to house/dog/cat sit for a friend of mine. My three favorite things about house sitting for this friend is 1) her dog Zoe, 2) her cat Pepper and 3) her kitchen. For me there is nothing better then having a big beautiful kitchen to get my creative juices flowing with creative recipes. So this blog will be covering a tasty dish, my favorite furry friends and other little details.

The recipe... is a herb roasted sweet Potatoe dish. It has yams in it too to add color. My palette is sweet'n salty, but for some reason I didn't want salty sweet potato fries or sweet bake potatoe with butter and brown sugar, I wanted something savory and melting flavors. I did some research and combined a couple recipes and poof! It was amazing! I served this herb roasted sweet potatoes as a side to some balsamic and garlic chicken and a green salad.

The Recipe:

Herb Roasted Sweet Potatoes

Serves: 4-6 

Ingredients:

2 sweet potatoes

2 yams (for color)

4 tbsp. olive oil

garlic salt

thyme

rosemary

pepper

Preheat your oven to 450 degrees F. Then drizzle oil over the bottom of a 9" x 9" ovensave backing dish. Peel your potatoes, cut into 1/2 round slices, then cut those slices in half. Put in a large bowl. Drizzle olive oil over them and sprinkle with garlic salt, thme, rosemary and pepper. Be very generous with the thyme and rosemary. Stir so that the potatoes are well covered then pour into your baking dish.

Put them in the oven for an hour. Test them with a fork to see if they are soft or if they need more time in the oven. If they need more time check them every 15 minutes. When they're ready let them cool just a bit and then serve!

I live with two wonderful roommates, but I must say there is nothing like having two furry friends invade your life in ways you never thought possible. When I go to bed at night both Pepper and Zoe would join me and make themselves comfortable. I'd even have a helpful, watching eye while baking.
